Pecan Pie in a cupcake!

So, I've been thinking of the Thanksgiving holiday and all of the traditional holiday desserts that make them so special. I wanted to figure out how these yummy desserts would translate into my favorite dessert - cupcakes! You've got pumpkin pie - pumpkin spice cupcake, sweet potato pie - sweet potato cupcake, pecan pie......pecan pie cupcake???????

Yep, pecan pie cupcakes with chocolate drizzle. Trust me when I tell you that these babies don't need frosting - the sweetness and richness is almost too much. I felt guilty when I ate one.....ok, guilt sets in after two.

I know, you wanted to get just a little closer........

Ok, last one......I just want you to be unable to resist the urge to order these right now!


While these are awesome just as pictured, you could just really go over the top with homemade whipped cream. These are dense and moist, slightly gooey - not in a "yucky" gooey way, but in a "mmmmmmmm, wow, goooeeeeyyyy" way! The most delicious way possible.

Progress and Pumpkin Cupcakes

Ok, so its going to be a little more difficult than I thought to post every day on my blog. To keep my stress level down, I have now decided to shoot for posting two to three times a week. Its a much more realistic goal for me. So, here's what's happened the past few days. I've discovered that its hard work trying to get a cupcake catering and delivery company off the ground! No surprise there, anything worth having requires hard work. For the past couple of days I've been working on getting small business insurance, getting my license by the MDA, and finalizing lease terms. Lots of phone calls, emails, and online research. BORING for you, but so exciting for me. I'm getting really anxious and can't wait to get in my kitchen and start really baking and expanding my business.

Enough of that, lets get to the good stuff - CUPCAKES!!! It was a busy weekend, we made a lot of cupcakes in various flavors - tart lemon paired with lemon buttercream, pumpkin spice with pumpkin buttercream, vanilla bean with vanilla bean buttercream, devil's food with chocolate ganache, devil's food filled with vanilla bean cream paired with chocolate fudge ganache, and of course Half Pints in devil's food topped with chocolate fudge ganache. Lots of chocolate. I love chocolate, but the fall season has me in the pumpkin mood........

I present to you pumpkin spice cupcakes with pumpkin buttercream. I really wish you could smell these......awesome. Here's another pic of the pumpkin spice cupcakes in all their glory.

I don't even like pumpkin, but I love these cupcakes (and so does my non pumpkin pie eating family). They are available for order now! Order some for your Thanksgiving dinner - a welcome change from the traditional pumpkin pie.

My first post!

Well, here it is. My first experience at posting in the blogosphere! I can't wait to post every day and share with you (hi mom and dad), the ups and downs involved in opening my gourmet cupcake catering and delivery company. I figure that blogging will be like my therapy, as a mom of four kids under six I don't have time for counseling! My company (also known as my fifth child) is redvelvetcupcakes. We are small and family owned - we specialize in making the most delicious moist, flavorful and absolutely delectable cupcakes. Like many cupcakeries, I started in my own kitchen baking for family and friends. However in order for me to obtain a license in Michigan, like many other states, I am required to work in a commercial kitchen. After tirelessly calling any and everyone who had access to a kitchen, and encountering what felt like a million "we're sorry, we don't rent out our kitchen" responses to my calls, I finally came across a wonderful church that is willing to rent their kitchen to me! Its a perfect kitchen and brand new, as an added bonus, its literally 5 minutes away from my house! Now we're just negotiating the details of the rental agreement. Once that is done I'm going into overdrive and implementing operation redvelvetcupcakes! I've been obsessed with cupcakes and getting my company off the ground for months now (ok, I've been obsessed with cupcakes for a lot longer than that) I'm super excited about this endeavor.
